🥣 Creamy Potato, Leek and Fennel Soup

Ingredients (serves 4)
  • 2 large yellow potatoes
  • 2 leeks (white part only)
  • 1 small fennel bulb (with fronds)
  • 1 white onion
  • 3 cups (750 ml) vegetable broth
  • 3 tablespoons garlic-flavored extra virgin olive oil
  • Salt and pepper, to taste
  • A few sprigs of fresh dill or fennel fronds (for garnish)
  • 2 slices of rustic bread (for croutons)
Preparation
  • Peel and dice the potatoes. Thinly slice the leeks, onion, and fennel.
  • PIn a pot, sauté the leeks, onion, and fennel in 1 tablespoon of garlic-flavored extra virgin olive oil over low heat for 5-6 minutes.
  • Add the potatoes, stir, and pour in the hot broth. Bring to a boil, then simmer on low heat for about 25 minutes, until the vegetables are tender.
  • Blend the soup with an immersion blender until smooth and velvety. Season with salt and pepper.
  • Ladle the soup into bowls, drizzle with a bit of raw garlic-flavored EVOO, top with the crunchy croutons, and garnish with dill or fennel fronds.

Gourmet Tip – For an elegant finish, add a hint of grated organic lemon zest or a dollop of sour cream in the center before serving.
