🐖 Balsamic-Glazed Pork Fillet (Aceto Balsamico di Modena PGI) with Caramelised Red Onions

Ingredients (serves 2)
  • 400 g pork fillet
  • 2 tablespoons Salvadori Aceto Balsamico di Modena PGI
  • 1 large red onion
  • 400 g pork fillet
  • 1 tablespoon honey (acacia or chestnut)
  • 1 teaspoon mild mustard
  • 2 tablespoons extra virgin olive oil
  • Salt and black pepper, to taste
  • A sprig of fresh thyme (optional)
Preparation
  • Thinly slice the red onion. Warm part of the olive oil in a frying pan, add the onion and a pinch of salt, and gently soften over a low heat for 8–10 minutes. Add 1 tablespoon of balsamic vinegar and the honey, allow to caramelise while stirring often, then set aside.
  • In a separate pan, heat the remaining oil. Sear the whole pork fillet on all sides to seal it, then reduce the heat and cook for 8–10 minutes, turning occasionally. Season with salt and pepper.
  • Towards the end of cooking, pour 1 tablespoon of balsamic vinegar and a teaspoon of mild mustard into the pan. Allow it to infuse and reduce for 2–3 minutes until you obtain a glossy, thick glaze.
  • Slice the pork fillet and place it on a warm plate. Spoon over the caramelised onions and drizzle with the balsamic glaze. Garnish with a few fresh thyme leaves..
