🌶️ Spaghetti with Fresh Tomato & chili-flavored EVOO

Ingredients (serves 2)
  • 6.3 oz (180 g) durum wheat spaghetti
  • 7 oz (200 g) ripe cherry or date tomatoes
  • 2 tablespoons chili-flavored extra virgin olive oil
  • 1 garlic clove, crushed with skin on
  • Fresh basil leaves
  • Fine salt, to taste
  • Freshly ground black pepper (optional)
  • A pinch of sugar (if needed to balance tomato acidity)
Preparation
  • Wash and halve the tomatoes.
  • In a large pan, gently sauté the garlic in 1 tablespoon of chili-flavored EVOO, then discard the garlic.
  • Add the tomatoes, a pinch of salt, and, if needed, a touch of sugar. Cook over medium heat for 8-10 minutes, until the tomatoes break down into a rustic sauce.
  • Meanwhile, cook the spaghetti in boiling salted water until al dente.
  • Drain the pasta and toss it in the tomato sauce, drizzling in the second tablespoon of chili-flavored EVOO raw for a bolder spicy aroma.
  • Tear in fresh basil leaves and season with black pepper if desired.
  • Plate and garnish with whole basil leaves and another drizzle of chili-flavored EVOO.

Gourmet Tip – For an extra refined touch, finish with a light grating of salted ricotta, or sprinkle with toasted breadcrumbs for added texture and flavor.
