🐟 Steamed Salmon with Vegetables and Basil-Flavored Oil

Ingredients (serves 2)
  • 2 skinless fresh salmon fillets (about 5.3 oz / 150 g each)
  • 3.5 oz (100 g) broccoli florets
  • 3.5 oz (100 g) cauliflower florets
  • 3.5 oz (100 g) sliced carrots
  • 1 sprig of fresh thyme
  • Sea salt, to taste
  • 1 tablespoon basil-flavored vegetable oil
  • 6-8 fresh basil leaves
  • Grated zest of untreated lemon (optional)
Preparation
  • In a blender, emulsify the basil-flavored vegetable oil with the fresh basil leaves and a pinch of salt. For a citrusy note, add a bit of lemon zest. Strain if a smoother texture is preferred.
  • Place the salmon fillets on parchment paper and top each with a sprig of thyme. Steam for 8-10 minutes, until tender and just cooked through.
  • Blanch or steam the carrots, broccoli, and cauliflower briefly in lightly salted water to preserve their color and crunch.
