Preparation
  • Thinly slice the fish with a sharp knife.
  • Arrange the slices on a serving plate, slightly overlapping or in a circular pattern.

  • Add a pinch of Maldon salt and, if desired, a light grind of white pepper.
  • Garnish with lemon zest and a few fresh herb leaves.

Garnish with lemon zest and a few fresh herb leaves.

Gourmet Tip – For a refined twist, pair the carpaccio with a brunoise of celery and green apple marinated in lemon juice. It adds a crisp, fresh contrast that perfectly complements the delicate fish and citrus aroma of the oil. Serve with lightly toasted crostini. For a final surprise, add a touch of freshly crushed pink peppercorns.
