🥩 Grilled Pork Chops with Herbs

Ingredients (serves 2)
  • 2 bone-in pork chops
  • 2 fresh rosemary sprigs
  • 1 sprig of thyme
  • 1 clove of garlic, unpeeled
  • Coarse sea salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons unfiltered extra virgin olive oil
Preparation
  • Optional but recommended: marinate the meat by rubbing the pork chops with 1 tablespoon of unfiltered EVOO, a few rosemary needles, the thyme, crushed garlic, and freshly ground black pepper. Let sit at room temperature for about 30 minutes.
  • Heat a cast iron grill or pan until very hot. Grill the pork chops for 3-4 minutes per side, depending on thickness, until a golden crust forms and the inside stays juicy. Season with salt at the end of cooking. Let the meat rest for 2 minutes on a cutting board, covered with foil.
  • Serve on a warm plate and drizzle with a spoonful of unfiltered EVOO. Its full-bodied, fruity character enhances the sear and herb aromas.
