🥩Grilled Pork Tenderloin with Rustic Potatoes

Ingredients
  • 1.1 lb (500 g) pork tenderloin (or another tender cut)
  • Extra virgin olive oil, as needed
  • 3 yellow potatoes
  • 1 teaspoon smoked paprika
  • Freshly ground black pepper
  • Sea salt, to taste
  • Fresh rosemary
  • Sweet paprika
  • Garlic powder
Preparation
  • In a bowl, combine the meat with a generous drizzle of extra virgin olive oil, smoked paprika, pepper, salt, and a few rosemary needles. Let it sit at room temperature for at least 30 minutes.
  • Wash the potatoes and cut them into wedges. Toss them with extra virgin olive oil, paprika, garlic powder, and salt. Bake in a conventional oven at 400°F (200°C) for about 35 minutes, turning them halfway through, until golden and crispy.
  • Heat a grill pan until very hot. Grill the pork slices for 2–3 minutes per side, depending on thickness, to achieve a seared exterior and juicy interior.
  • Plate the grilled filets with the rustic potatoes. Finish with a drizzle of extra virgin olive oil to bring all the flavors together.
