🥖 Gourmet Bruschetta with Cherry Tomatoes and Mozzarella

Ingredients (for 4 bruschette)
  • 4 slices rustic bread (Tuscan or country-style)
  • 5.3 oz (150 g) fresh fior di latte mozzarella, well drained and diced
  • 5.3 oz (150 g) ripe cherry tomatoes
  • Fresh basil leaves
  • Dried oregano, to taste
  • Duca di Toscana EVOO, to taste
  • Flaky sea salt
  • Freshly ground black pepper
Preparation
  • Toast the bread slices in a hot oven at 200°C (390°F) for about 5–6 minutes, or on a grill, until golden and crisp on the outside but soft inside.
  • Cut the cherry tomatoes into halves or quarters and season in a bowl with extra virgin olive oil, salt, pepper, and a light sprinkle of dried oregano.
  • Top the toasted bread with the seasoned tomatoes, add the diced mozzarella, and place a fresh basil leaf on each slice.
  • Finish with a generous drizzle of extra virgin olive oil.
