🥩 Glazed Beef Bites with Crisp Vegetables

Ingredients (for 2 servings)
For the beef::
  • 300 g (10.5 oz) beef sirloin or chuck, cut into bite-sized pieces
  • 1 tablespoon soy sauce
  • 1 teaspoon acacia honey
  • 1 teaspoon aged balsamic vinegar
  • 1 tablespoon 100% Italian extra virgin olive oil
For the vegetables:
  • 5 oz (150 g) broccoli florets
  • 3.5 oz (100 g) baby carrots
  • 3.5 oz (100 g) potatoes, thinly sliced
  • Sea salt, to taste
To finish:
  • Extra virgin olive oil (for drizzling)
  • Freshly ground black pepper
  • Pink salt flakes (optional)
Preparation
  • Blanch the broccoli and carrots in salted water for 4–5 minutes, until crisp-tender. Drain and set aside.
  • Steam the potato slices until tender but still holding their shape.
  • Heat 1 tablespoon of extra virgin olive oil in a skillet. Sear the beef bites over high heat for 2-3 minutes.
  • Add soy sauce, honey, and balsamic vinegar. Cook for another 2–3 minutes, until the beef is caramelized and glossy.
  • Arrange the vegetables on the plate, then top with the glazed beef.
  • Finish with a drizzle of extra virgin olive oil, black pepper, and a few pink salt flakes.
