🥬 Grilled Vegetables with Fresh Basil

Ingredients (for 2 servings)
  • 1 eggplant, sliced lengthwise
  • 1 zucchini, sliced into rounds
  • ½ red onion, halved
  • 1 red bell pepper, cut into strips
  • 6-8 whole cherry tomatoes
  • 4-5 green asparagus spears
  • 4 cremini or white mushrooms, halved lengthwise
  • ½ ear of corn, cut into thick rounds
  • Fresh thyme, to taste
  • Flaky sea salt
  • Freshly ground black pepper
  • 2 tablespoons Villa Chieci EVOO
  • Fresh basil, to finish
Preparation
  • Wash and slice all the vegetables. Pat them dry with paper towels to remove any excess moisture.
  • Grill the vegetables on a hot grill or cast-iron skillet without oil, turning carefully until grill marks appear and they soften – about 3–5 minutes per side depending on the vegetable.
  • Arrange the grilled vegetables on a serving plate. Drizzle with extra virgin olive oil. Season with flaky salt, freshly ground black pepper, and torn fresh basil leaves.
  • Garnish with fresh thyme and, if desired, an extra drizzle of oil to enhance the aroma.
