🥗 Raw Artichoke Salad with Lemon and Parmesan

Ingredients (serves 2)
  • 2 fresh artichokes (Romanesco or spiny variety)
  • 1 organic lemon (juice + thin slices)
  • 4-5 radishes, thinly sliced
  • 1.4 oz (40 g) of shaved Grana Padano or aged Parmesan
  • Fennel fronds or wild fennel (for garnish)
  • 2 tablespoons soybean oil
  • Sea salt and white or pink pepper, to taste
Preparation
  • Clean the artichokes by removing the tough outer leaves and trimming the tips. Cut the hearts in half, remove any inner fuzz, and slice very thinly.
  • Soak the sliced artichokes in cold water with the juice of half a lemon for 10 minutes, then drain and pat dry.
  • On a serving plate, arrange the lemon slices, radishes, and sliced artichokes.
  • Add the shaved cheese and garnish with fennel fronds.
  • Drizzle with soybean oil, season with a pinch of salt and a few grinds of pepper.
