Ingredients
  • 2.2 lbs (1 kg) yellow potatoes
  • Refined and Virgin Olive Oil
  • 1 teaspoon smoked sweet paprika
  • ½ teaspoon chili powder
  • ½ teaspoon dried oregano
  • Fine salt, to taste
  • Fresh mint leaves, for garnish
Preparation
  • Peel the potatoes and cut them into thin sticks. Soak them in cold water for 30 minutes to remove excess starch, which makes them crispier when fried.
  • Drain and dry the potatoes thoroughly using a clean kitchen towel or paper towels.
  • Heat the olive oil blend to about 300°F (150°C). Fry the potatoes for 4–5 minutes until they start to soften but aren’t yet golden. Drain on paper towels.
  • Drain the fries again and transfer them to a bowl. Toss the fries gently with salt, paprika, chili powder, and oregano.
  • Serve the fries on a plate, garnish with fresh mint leaves, and pair with spiced ketchup or smoky barbecue sauce.

Gourmet Tip – Olive oil made from a blend of refined and virgin oil Refined and Virgin Olive Oil is an excellent choice for frying thanks to its lighter, more delicate flavor compared to extra virgin olive oil. Its composition makes it stable at high temperatures, perfect for achieving golden, crispy fries without overpowering the final taste. Ideal for those who want a light, fragrant fry that lets the aroma of spices and the natural sweetness of the potato shine through. For an even more surprising gourmet twist, finish with a sprinkle of grated Parmesan and a few drops of truffle-flavored oil right after cooking.
