🥗 Mediterranean Fusilli Salad

Ingredients (serves 4)
  • 11 oz (320 g) fusilli (or other short pasta)
  • 5.3 oz (150 g) cherry tomatoes, halved
  • 1 yellow bell pepper, diced
  • 1 zucchini, thinly sliced
  • ½ red Tropea onion, thinly sliced
  • 2.8 oz (80 g) pitted black olives, sliced
  • 8-10 fresh basil leaves
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 3 tablespoons mixed seed oil
Preparation
  • Cook the pasta in plenty of salted water until al dente. Drain and rinse under cold water to stop the cooking. Drain well and set aside.
  • In a large bowl, combine the cherry tomatoes, bell pepper, raw zucchini, red onion, and olives.
  • Add the cooled pasta, season with salt and pepper, and toss gently.
  • Drizzle with mixed seed oil and refrigerate for at least 30 minutes to let the flavors meld.
  • Before serving, top with a few whole basil leaves and finish with a drizzle of mixed seed oil.
