🧆 Crispy Potato & Smoked Provola Croquettes with Panko Crust

Ingredients (makes about 12 croquettes)
  • 10.6 oz (300 g) boiled and mashed potatoes
  • 3.5 oz (100 g) grated Parmigiano Reggiano
  • 3.5 oz (100 g) smoked provola cheese, diced
  • 1 whole egg
  • 1 tablespoon chopped fresh parsley
  • Salt, pepper, and a pinch of nutmeg

For the coating:
  • Flour, as needed
  • 1 beaten egg
  • Panko or rustic breadcrumbs, as needed

For fryinge:
  • High oleic sunflower oil (enough for deep frying)
Preparation
  • In a bowl, combine mashed potatoes, Parmigiano, smoked provola cheese, egg, parsley, salt, pepper, and a pinch of nutmeg. Mix well until the mixture is smooth and moldable.
  • With damp hands, shape into flattened croquettes (like small medallions).
  • Dredge each croquette in flour, then dip into the beaten egg, and coat with panko, pressing firmly to adhere.
  • Heat the high oleic sunflower oil to about 390°F (200°C). Fry a few croquettes at a time, turning them until evenly golden (about 2-3 minutes per side).
  • Remove with a slotted spoon and drain on paper towels.
