🍗 Glazed Chicken Wings with Sweet and Sour Sauce

Ingredients (serves 4)
  • 2.2 lbs (1 kg) chicken wings (whole or split)
  • 2 tablespoons grapeseed oil
  • 2 tablespoons soy sauce
  • 1 tablespoon chestnut or wildflower honey
  • 1 tablespoon apple cider vinegar or rice vinegar
  • 1 teaspoon fresh grated ginger
  • 1 garlic clove, finely chopped
  • Fresh chili, chopped (optional)
  • Fresh scallion, for garnish
  • Salt and pepper to taste
Preparation
  • In a bowl, mix soy sauce, honey, vinegar, ginger, garlic, and 1 tablespoon of grapeseed oil. Pour the marinade over the wings, cover, and refrigerate for at least 1 hour (ideally 3-4).
  • Heat a large non-stick skillet with the remaining tablespoon of grapeseed oil. Sear the wings over medium-high heat on all sides until golden brown (about 10 minutes)..
  • Add the remaining marinade to the pan. Cover and cook over medium heat for another 15–20 minutes, turning occasionally, until the sauce thickens and the wings are glossy and caramelized.
  • Remove from heat, sprinkle with sliced scallions and, if desired, a drizzle of raw grapeseed oil.

Gourmet Tip – Grapeseed oil, rich in polyphenols and known for its delicate flavor, retains its properties even at high temperatures. It enhances the sweet-salty notes of the dish without overpowering them, keeping the result light and well-balanced.
