🍗 Gourmet Chicken Crunch Trio with Fries and Rustic Sweet Potato Chips

Ingredients (serves 2 generously)
  • About 10.5 oz chicken fillets
  • Buttermilk (or plain yogurt mixed with lemon juice)
  • Flour, as needed
  • Smoked paprika, garlic powder, salt, pepper
  • 2 yellow potatoes
  • 1 sweet potato
  • Sweet paprika, fine salt
  • Fractionated palm oil (for frying)
  • Dips: mayo, ketchup, sweet mustard or BBQ sauce
Preparation

  • Marinate the chicken in buttermilk with spices, salt, and pepper for at least 2 hours.
  • Dredge in flour and fry at 350°F (175°C) for 4–5 minutes. Drain on paper towels.
Fries:
  • Cut potatoes into batons and soak in cold water for 30 minutes. Dry well.
  • Fry at 320°F (160°C) for 5–6 minutes, then finish at 375°F (190°C) until golden. Drain on paper towels.
Rustic chips:
  • Thinly slice the sweet potato.
  • Fry at 340°F (170°C) until crisp, then drain on paper towels. Season with paprika and salt.

Arrange the fried chicken at the center, with fries and chips on the side. Serve hot with dips in small bowls for a perfect balance of crunch and tenderness.
