🍢 Grilled Spiced Chicken Skewers

Ingredients (for 4 skewers)
  • 1.1 lb (500 g) chicken breast, cut into even cubes
  • 2 tablespoons corn oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • 1 garlic clove, grated
  • 1 tablespoon chopped parsley or fresh cilantro
  • Salt and pepper to taste
Preparation
  • Prepare the marinade: In a bowl, combine the corn oil, lemon juice, spices, garlic, salt, and pepper. Add the chicken cubes and mix well. Cover and marinate in the fridge for at least 2 hours (preferably 4).
  • Thread the chicken onto pre-soaked bamboo or metal skewers, spacing the pieces evenly.
  • Heat a well-oiled grill or grill pan over medium-high heat. Cook the skewers for 8–10 minutes, turning often to ensure even grilling and juicy results. Brush with a little corn oil before serving, and sprinkle with fresh herbs and smoked sea salt, if desired.
