From early harvest to full ripeness, the stage of maturity can influence an oil’s aroma, intensity and flavor profile.
As fall arrives, one of the most important moments in the olive oil season begins: the harvest. This is a key stage, because the timing of the harvest can have a significant impact on the characteristics of the resulting oil.
Olives harvested earlier, when they are still green or just beginning to ripen, tend to produce oils with a more pronounced profile. These oils may reveal fresh, grassy and fruity aromas, along with more pronounced bitter and peppery notes, giving them a stronger and more distinctive personality.
As olives continue to ripen, the oil’s profile tends to become softer and more delicate. Bitter and peppery notes may become less pronounced, giving way to a rounder, smoother mouthfeel.
This does not mean that one harvest time is better than another. The right moment depends on the desired result, the olive variety, the growing area, the weather conditions of the season and the intended use of the oil.
Some cultivars express their best qualities with an earlier harvest, while others reach an interesting balance at a more advanced stage of ripeness. Climate also plays an important role: temperature, rainfall and seasonal conditions make every harvest different from the last.
For this reason, harvesting is never an automatic decision. It is the result of experience, observation and a deep understanding of the fruit. Choosing when to harvest means understanding the olives, the land and the quality profile you want the oil to express.
In the kitchen, this variety translates into oils with different characters. A more intense oil can enhance soups, legumes, grilled vegetables, meats and dishes with bold flavors. A more delicate oil can be ideal for fish, delicate salads, fresh vegetables or recipes where a more balanced seasoning is preferred.
For more than a century, Salvadori has been selecting oils with different profiles and personalities, always with a focus on quality, balance and the distinctive character of each oil.
